My first open pan bake! 🥖🥖 Ok so I did do some research and I believe this is how an open pan bake is supposed to work. Basically you do everything as you normally would until bake time. Preheat your oven to 450 degrees with your sheet pan on the top rack and a large skillet on the bottom rack. While your oven preheats bring 4 cups of water to a boil. Place your loaf in the sheet pan and then carefully add your water to the skillet, close the oven and let bake for 20 minutes. Remove your skill

I did some experimenting with these loaves. If you have questions, ask in the comments! One was baked “open” in the cast iron fry pan and the other was baked in the Dutch oven. Can you tell the difference? One is a tiny bit gummy on the bottom, the first loaf, which was baked in the Dutch oven. Otherwise, other than a crispier crust on the open baked loaf there isn’t really a significant difference.
